Hi can you please explain 15A: hapless chap, out-and-out fruitcake, answer is Crank. Obvs a crank is sort of a hapless chap ( though more of a weird, grouchy chap) but what’s the fruitcake about?
Tricky clue, Rowan! You need to read it as HAPless CHAP – ie remove HAP from CHAP to get C. Add RANK (‘out and out’). ‘Fruitcake’ is the definition, it’s an old idiom which I think comes from ‘as nutty as a fruit cake’.

Hi. Having trouble with the last clue in Puzzle No. 1225, 25 Across: “Obstinate worker with intelligence left at sea comes back inside.
I’ve got S-R -P-Y, which might mean STROPPY, but I can’t figure out how the clue works.
Worker is usually ANT. Intelligence = IQ?
Explanation welcome.

Yes , worker is often ANT but here it’s ‘worker with intelligence’ = SPY. ‘Left at sea’ is PORT, which is reversed (comes back) as TROP. Put that inside SPY to get STROPPY.
